Strawberry Parfait

A very refreshing dessert and a little bit pretty :). Perfect if you are  having your girlfriends over!

For the base:

4 eggs
4 tablespoons of flour
4 tablespoons of sugar
1 sachet baking powder

Beat egg whites to soft peaks and gradually add in the sugar spoon by spoon until glossy. Add egg yolk one by one, sugar and flour. Add baking powder and mix well. Bake in a tray lined with baking paper for 15mins or until golden. Leave to cool


100ml milk (full cream)
5 egg yolks
150 g sugar
1 sachet vanilla sugar
200g gelatin strips
500ml thickened cream

Soak gelatin strips in luke warm milk and leave to double in size. Beat egg yolks with sugar and vanilla sugar and steam until the volume is doubled. When the mixture is doubled ass gelatin.

Once this mixture is cooled, add beaten thickened cream infused with blended strawberries with sugar and fold through.

Pour over base and refrigerate for a few hours. Once firm and cool you can add a chocolate mousse topping, or beaten egg whites and decorate as desired.
