Fruit Jelly


A refreshing summer dessert that is super easy to make..

Fruit variety Berry Mixture
6 x Aeroplane Jelly packets (flavour as desired)

Choose a tray of desired shape and add first layer of jelly, Refrigerate for an hour and then add the fruit mixture, put back into the fridge until set. Keep on repeating the above process with each layer until you fill the tray to the top. This needs to be prepared the day before.

Once all of the layers are set, carefully tip out the jelly and serve with whipped cream and sprinkles.

Tip: You can play around with the colours of the layers to give it an even more playful effect.




Oranage Slice Jelly


A perfect and fun idea for kids birthday parties..

3-4 large oranges
Aeroplane Jelly (flavour as desired)


Cut oranges in half and carve out the orange until you're just left with the shell. Use the orange to make fresh orange Juice.


Fill the carved orange haves with a jelly mixture and pour into the oranges. Place them on a tray securely so they do not tip over and refrigerate until the jelly sets. When set cut up in slices to give the effect of an orange.

Walnut Short Bread Cookies - Sape/Lokumi


This is a perfect little treat that is very easy to make and can be kept in a cookie jar at all times for any surprise visitors. Also a nice treat as a little gift :).

140g butter
70g sugar
70g blended walnuts
170g flour
1 lemon rind
icing sugar
Vanilla sugar

In a bowl add melted butter and gradually add a mixture of flour, blended walnuts, lemon rind and sugar. Mix everything well with a wooden spoon and then knead the mixture until you get a smooth consistency. Roll the dough to about 0.5cm thickness and cut out into the desired shapes. Place on a tray brushed with oil and bake on 180C for about 15 minutes.

After the cookies have cooled cover them with icing sugar mixed with Vanilla sugar or Cinnamon if preferred. Enjoy with a cup of tea or coffee.

Strawberry Parfait



A very refreshing dessert and a little bit pretty :). Perfect if you are  having your girlfriends over!
Ingredients:


For the base:


4 eggs
4 tablespoons of flour
4 tablespoons of sugar
1 sachet baking powder


Beat egg whites to soft peaks and gradually add in the sugar spoon by spoon until glossy. Add egg yolk one by one, sugar and flour. Add baking powder and mix well. Bake in a tray lined with baking paper for 15mins or until golden. Leave to cool


Filling:


100ml milk (full cream)
5 egg yolks
150 g sugar
1 sachet vanilla sugar
200g gelatin strips
500ml thickened cream


Soak gelatin strips in luke warm milk and leave to double in size. Beat egg yolks with sugar and vanilla sugar and steam until the volume is doubled. When the mixture is doubled ass gelatin.


Once this mixture is cooled, add beaten thickened cream infused with blended strawberries with sugar and fold through.


Pour over base and refrigerate for a few hours. Once firm and cool you can add a chocolate mousse topping, or beaten egg whites and decorate as desired.

Vanilla Slice - Krempita



One of my favourite cakes of all time. With a smooth melt in your mouth texture and crispy pastry as a base and on top.

Ingredients

250g puff pastry
6 eggs
200g gelatin
30g flour
3 x 150g sugar
50g vanilla sugar
750ml milk (full cream)
300ml water
250ml Thickened cream
4 x Vanilla beans

Method:

Roll out puff pastry to the size of the tray. Brush trail with oil and line it with the pastry - if you have two trays the same size bake both pastries at the same time, otherwise alternate. Bake on 180 degrees until puffed and golden. Leave to cool.

Separate egg whites and beat with a mixer to achieve soft peaks, gradually add 150g of sugar spoon my spoon until firm and glossy. Repeat the above with the egg yolk in a separate bowl and add vanilla sugar.

To the mixed yolks add gelatin, and mixed flour with water (like you would for a sauce base). Keep adding the gelatin and the flour and water mixture gradually so that you yolk texture is silky and smooth.

Pour the milk into a large saucepan and add the vanilla beans with an extra sachet of vanilla sugar. Keep stirring with a wooden spoon and bring to boil. Gradually start adding the yolk mixture and stir constantly so that no lumps form. Keep stirring until a thick texture is formed. Take off heat and leave to cool for about 15mins. Slowly fold beaten egg whites into the mildly hot mixture.

Pour over the first puff pastry base (should be in your baking tray). The second puff pastry should be cut up into equally sized squares. When the vanilla mixture is completely cooled, add the thickened cream beaten with 150g sugar on top.  Line the squares on top of the filling and sprinkle with icing sugar.

Refrigerate for a few hours and enjoy this delicious treat.

Cupcake Tower



This cupcake tower was inspired by the Liverpool Football Soccer Club colours and I made it for my brother's 13th birthday. It was practical and quiet different to the usual birthday cake. The kids loved the look and the sparkles add the extra effect instead of candles.

Here is my recipe:


Banana Choc-Chip Cupcakes


Ingredients:


2 bananas
2 cups self raising flour
2/3 cup of sugar
1/2 cup chopped chock bits (I like to use dark chocolate)
2 eggs lightly beaten
2/3 cup of milk
1 teaspoon of vegetable oil


Method


Mash bananas with a fork and add flour into the bowl. Combine bananas and flour using your fingers until you get a crumb like texture. Make a well in the centre and add sugar, chocolate bits, eggs, milk and oil. Combine well with a fork, the texture should be a bit runny similar to good gravy thickness.


Brush muffin tray with oil and pour mixture in to the top. Bake for about 15-20 minutes on 180 degrees.


Once the muffins are ready coll them down and continue with assembling the tower.


This is the fun part.


Purchase a hard carboard cone (I bought mine in Lincraft).
Purchase barbecue skewers
Soft Marshmellows
Rubber band


Put the rubber band around the cone starting about 4cm from the bottom and draw a soft line in pencil. keep moving the rubber band up by about 3-4cm and keep drawing the line all the way around the cone until the top.


Cut skewers in half with a sharp knife and put through the cone along the drawn lines leaving about 2-3cm in betweem each skewer. Place a marshmallow on each skewer. Put icing on your cupcakes as desired and start putitng them on each skewer. If you're going to do different colours go in a pattern.

Mini Cherry Sponge Cake with Strawberry Cream filling..


A beautifully light sponge, sweet throughout with a delicious cherry zest in every bite. Great idea for mini birthday cakes or it can be cut in squares and topped with icing sugar instead.

Here's how to make this quick and easy dessert:


Ingredients:


4 eggs
4 spoons of sugar
1 sachet vanilla sugar
4 spoons of flour
1 sachet baking powder
Pitted Compot Cherries


Strawberry cream filling


2 egg whites beaten until glossy
Packet of blended strawberries/cherries with sugar

Combine the two (you can add food colouring to intensify the colour of the cream if desired)


Method:


Separate egg whites form the yolks and beat the egg whites until soft peaks form. Add sugar spoon by spoon and mix well until glossy and thick. Add egg yolks, one by one followed by the flour, spoon my spoon. Add vanilla sugar and baking powder and mix well.


Line a baking tray with baking paper and brush with vegetable oil so the baking paper stays on the tray. Pour the mixture (should be about 2cm thick) and bake on 180 degrees for about 7 minutes. Take out of oven, the base should start to just solidify, add cherries throughout one by one as desired. Return to oven and bake for another 10 minutes or until set.


Once cooled down, peel the baking paper off and either form the mini cake in two layers as shown in picture above or cut into cubes and sprinkle with icing sugar.
